Cookies

2 1/4 cups Kodiak Cakes Protein Pancake Power Cakes, Flapjack and Waffle Baking Mix, Buttermilk
1/2 tsp baking powder 
1/4 tsp salt
1 tsp cinnamon 
1 egg
2 Tbsp non fat plain Greek yogurt
4 Tbsp Land o’ Lakes light butter, room temperature
2 Tbsp water
1 tsp vanilla extract
1/4 cup regular brown sugar
Topping Ingredients
1/ 4 cup white granulated sugar
1/2 Tbsp cinnamon
Instructions
Preheat oven to 350F.
In a large bowl, mix together Kodiak mix, baking powder, 1/4 tsp cinnamon and salt.
In a separate bowl cream together butter, yogurt, vanilla, and 1/4 cup brown sugar. Whisk in egg and water until well combined.
Gradually add wet ingredients into dry ingredients. And stir until well combined.
In a small mixing bowl combine, 1/4 cup white sugar with 1/2 Tbsp cinnamon and pour onto a shallow plate.
Using your hands (I recommend that you flour your hands to keep dough from clinging to your fingers) roll dough into 1 inch balls.
Roll dough balls in sugar and cinnamon mixture.
Place dough balls on a cookie sheet, that has been lined with parchment paper.
Bake for 7-9 minutes. Do not over bake otherwise they will be hard and not soft.
Servings: Makes 24 cookies / 2 Freestyle Smart Points
Notes
Note: You can substitute the brown sugar and white sugar with Sukrin Gold and Stevia or Sucralose ( the same amounts) and they would be 1 Freestyle Smart Points each. I have made them both ways and I prefer them with the regular sugar ( since the amount minimal and doesn't impact the points too much.)
